The mid-palate is full and round and leads to a lingering finish suggestive of raspberry, cherry and mocha. Cold Soak: 5 days Fermentation: 14 days in stainless steel open top tank Brix at Harvest: 24.0 Aging: Aged in French Oak barrels (40% new) for 14 months pH: 3.4 TA: 6.5 g/L Alcohol: 14.3%
