Description
Harvest Date: October 14th, 2019. Yield: 1.8 tons/acre. Ancient vines. Employed ancient winemaking methods using almost no machinery. Whole cluster fermentation with native yeast, pressed to barrel for 18 mos. aging. 100% neutral French oak Production: 60 cases Sensory Notes: Bright garnet in the glass, aromas of the earth the vines are planted in- rocky, mineral with notes of red delicious apple, and charcuterie. Firm palate with fine tannins and mouthwatering acidity. Flavors of red plum, fresh cooking herbs and mineral with a long, savory finish. pH: 3.62 TA: .57 g/100ml Alc: 14.3%
